Making cheese is something the Harper women have done for generations. We lovingly coax fresh milk into cheese, in our tiny farm dairy, from recipes more than two centuries old. Each cheese is hand-crafted using traditional methods, which have been discarded by modern dairy factories in the quest for efficiency. At Sherrington, we choose to make only limited quantities of cheese, using the old ways, because we believe it creates a better product - this is the way cheese was before mechanisation and standardisation became the norm. Sherrington cheeses look, smell and taste the way they were meant to - a real taste of history.

The Land
Traditionally-made cheese, much like wine, is a concentrated expression of the land which produces it, which in this case is the timeless landscape of the Marlborough Sounds, in New Zealand's best known food and wine producing region. The soil, season, weather, pasture, the breed of animal, (and even what time of day it was milked!) all contribute to the character of a cheese. Understanding the factors that influence a cheese's development is a skill that takes patience and intuition to master.
Cheese-Making Philosophy

Sherrington cheeses are made from local Marlborough products. The milk comes from Linkwater valley, our salt is harvested from Lake Grasmere and our olive oil (rubbed on the rind of some cheeses) comes from near Blenheim. There is nothing artificial about our cheeses. No synthetic flavourings, colourings or preservatives are ever added. It's all about cheese in its purest, most natural form.

Marlborough Cheese Trails is a unique way to explore the heart of the world-famous wine region of Marlborough, equiped with a picnic pack containing seasonal cheeses, other locally-made foods, tasting notes and directions to wineries and breweries, where they make the specially-chosen matching drink.
